Start with 5 pounds of Beef Brisket (Whole, Lean Only). Place in a large pot.

Add in some peppercorns, bay leaf, and water to cover. Cover and bring to a boil.

Reduce heat and simmer 3 to 4 hours until tender, skimming fat occasionally.

During the final hour of simmering, add carrots cut into ½-inch chunks, turnips cut into ½-inch cubes, and chopped onion.

Meanwhile, core a head of cabbage and cut into 1-inch pieces.

During the last 20 minutes, add cabbage to the pot.

When done cooking, transfer meat to a cutting board, and thinly slice against the grain.

Drain the vegetables, and arrange them around the meat on a festive platter.

Grab some mustard, maybe some melted butter, and dig right in!
